Creamy Cajun chicken linguine

Creamy Cajun Chicken Linguine is a delightful fusion of Italian and Southern American cuisines. It features tender chicken strips seasoned with a blend of Cajun spices, tossed in a creamy sauce with linguine pasta. This dish is not only bursting with flavor but also offers a comforting and satisfying meal.

  • 300g linguine pasta
  • 2 chicken breasts, sliced into chunks
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tsp Greenfields Cajun seasoning (adjust according to taste)
  • 200ml double cream
  • 100ml chicken stock
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese, for serving
  1. Cook the linguine according to the package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Add the chicken strips and fry until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add a bit more oil if needed, and sauté the onion and garlic until soft, about 5 minutes.
  4. Return the chicken to the pan, sprinkle over the Cajun seasoning, and stir well to combine.
  5. Pour in the double cream and chicken stock, and bring to a simmer. Let the sauce thicken slightly, about 5 minutes. Season with salt and pepper to taste.
  6. Add the cooked linguine to the pan, tossing well to coat the pasta in the sauce.
  7. Serve hot, garnished with fresh parsley and grated Parmesan cheese.
