Cajun spiced chicken burgers with bacon, cheese and avocado

For an indulgent meal try this grilled Cajun-spiced chicken breasts recipe, served with bacon, avocado, cheese, and spinach in a soft brioche bun, combine the bold flavours of Cajun seasoning with the creaminess of avocado and cheese, complemented by the smokiness of bacon and the freshness of spinach. Perfect for a weekend treat or a special weeknight dinner

  • 4 chicken breasts, boneless and skinless
  • 2 tbsp Cajun seasoning
  • 4 slices of bacon
  • 1 ripe avocado, sliced
  • 4 slices of your favourite cheese (Cheddar or Pepper Jack work well)
  • A handful of fresh spinach leaves
  • 4 brioche buns, halved
  • Olive oil for grilling
  • Salt and pepper to taste

For the Cajun Mayonnaise:

  • 4 tbsp mayonnaise
  • 1 tsp Cajun seasoning
  1. Prepare the Chicken: Season both sides of the chicken breasts with Cajun seasoning, salt, and pepper. Drizzle olive oil over the chicken to coat.
  2. Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked through. The internal temperature should reach 165°F (74°C). Remove from the grill and let it rest for a few minutes.
  3. Cook the Bacon: While the chicken is grilling, cook the bacon in a pan over medium heat until crispy. Drain on paper towels.
  4. Prepare the Cajun Mayonnaise: In a small bowl, mix the mayonnaise with 1 tsp of Cajun seasoning. Set aside.
  5. Assemble the Sandwiches: Toast the brioche buns lightly. Spread a layer of Cajun mayonnaise on the bottom halves. Place a grilled chicken breast on each bun, followed by a slice of cheese, bacon, avocado slices, and spinach leaves. Top with the other half of the bun.
  6. Serve: Serve immediately while warm.
