Poppy seed pastry (Mohnstrudel)

This traditional pastry is a beloved treat, perfect for enjoying with a cup of coffee or tea, offering a taste of Austria’s rich pastry tradition, combining the unique flavours of poppy seeds and citrus zest for a delightful treat

For the Dough:

  • 250g all-purpose flour
  • 60ml warm water
  • 60ml warm milk
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1 egg, beaten

For the Filling:

  • 150g poppy seeds, ground
  • 100g granulated sugar
  • 120ml milk
  • 1/2 teaspoon vanilla extract
  • 60g unsalted butter
  • 1/4 teaspoon ground cinnamon
  • Zest of 1 lemon
  • Zest of 1 orange
  • 60g raisins (optional)

For the Topping:

  • 30g powdered sugar
  1. Prepare the Dough:
    • In a mixing bowl, combine the flour and salt.
    • In a separate bowl, mix warm water, warm milk, vegetable oil, and beaten egg.
    • Pour the wet mixture into the dry ingredients, and knead until a smooth dough forms. If the dough is too sticky, add a little more flour.
    • Form the dough into a ball, cover it with a clean cloth, and let it rest for about 30 minutes.
  2. Prepare the Filling:
    • In a saucepan, combine ground poppy seeds, granulated sugar, milk, vanilla extract, unsalted butter, ground cinnamon, lemon zest, and orange zest.
    • Cook the mixture over low heat, stirring constantly, for about 10 minutes until it thickens. If using raisins, add them during this step.
    • Remove from heat and let the filling cool.
  3. Assemble the Mohnstrudel:
    • Preheat your oven to 350°F (180°C).
    • Roll out the rested dough on a floured surface into a thin rectangle, about 1/8-inch thick.
    • Spread the cooled poppy seed filling evenly over the dough, leaving a small border around the edges.
    • Carefully roll up the dough, tucking in the edges as you go, to form a log. Place the seam side down on a baking sheet lined with parchment paper.
  4. Bake:
    • Bake in the preheated oven for 20-25 minutes or until the Mohnstrudel is golden brown and crispy.
  5. Serve:
    • Allow the Mohnstrudel to cool slightly, then dust with powdered sugar.
    • Slice, serve, and enjoy your homemade Austrian Mohnstrudel!
