Spiced banana muffins

Banana muffins are a delightful treat that children will love both making and eating

Ingredients

  • 3 ripe bananas
  • 75g unsalted butter (melted)
  • 125g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon bicarbonate of soda
  • 1 pinch of salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 190g plain flour

  • Paper muffin cases
  • Mixing bowls
  • Measuring spoons and cups
  • Fork or potato masher
  • Spoon or spatula
  1. Preheat the Oven: Preheat your oven to 180ยฐC (160ยฐC fan) or Gas Mark 4. Line a muffin tin with paper cases.
  2. Mash the Bananas: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  3. Mix Wet Ingredients: Add the melted butter, sugar, egg, and vanilla extract to the mashed bananas. Mix well until all ingredients are combined.
  4. Add Dry Ingredients: Sprinkle the bicarbonate of soda, salt, cinnamon, nutmeg, and ginger over the banana mixture. Stir to incorporate.
  5. Combine with Flour: Gradually add the flour to the wet mixture, stirring gently until just combined. Be careful not to overmix.
  6. Fill Muffin Cases: Spoon the batter into the prepared muffin cases, filling each about 2/3 full.
  7. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
  8. Cool and Enjoy: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.
