Rose and pistachio truffles

A luxurious blend of floral and nutty flavours, encapsulated in a decadent, smooth chocolate shell, the pistachios provide a crunchy texture and enhance the truffles with their distinctive taste and vibrant colour.

  • 200 grams of dark chocolate (70% cocoa)
  • 100 ml of double cream
  • 1 tablespoon rose water
  • 2 tablespoons chopped pistachios, plus extra for garnish
  • 1 tablespoon dried edible rose petals, plus extra for garnish
  • 25 grams unsalted butter, softened
  1. Finely chop the dark chocolate and place it in a heatproof bowl.
  2. In a saucepan, gently heat the double cream until it just begins to simmer, then remove from heat.
  3. Pour the hot cream over the chopped chocolate and let it sit for 1 minute without stirring. Then, stir gently until the chocolate is completely melted and the mixture is smooth.
  4. Stir in the softened butter and rose water into the chocolate mixture until fully incorporated.
  5. Cover the mixture and refrigerate for at least 2 hours, or until firm enough to shape.
  6. Once chilled, use a teaspoon to scoop out portions of the mixture. Roll them into balls, then roll each ball in chopped pistachios and rose petals to coat.
  7. Sprinkle with extra pistachios and rose petals for garnish. Chill the truffles in the refrigerator until they are firm, about 30 minutes.
