Caramelised Honey and Spice Pecans

  • 250g pecans
  • 2 tablespoons unsalted butter
  • 3 tablespoons honey
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • Pinch of cayenne pepper (adjust to your spice preference)
  1. Prepare the Pecans: Begin by preheating your oven to 180°C (350°F) and lining a baking sheet with parchment paper or a silicone baking mat.
  2. Melt the Butter: In a medium-sized saucepan, melt the unsalted butter over medium heat. Stir it gently until it’s completely melted and starts to bubble slightly.
  3. Add Honey and Spices: Once the butter is melted, add the honey, ground cinnamon, ground nutmeg, ground ginger, salt, and a pinch of cayenne pepper. Mix everything together thoroughly, allowing the flavours to combine and create a fragrant mixture.
  4. Add Pecans and Coat: Now, toss the pecans into the honey-spice mixture, ensuring they are evenly coated. Continue to cook the pecans with the mixture for about 2 minutes, stirring constantly to prevent burning.
  5. Caramelisation in the Oven: Transfer the coated pecans onto the prepared baking sheet, spreading them out in a single layer. Place the sheet in the preheated oven and bake for approximately 8 minutes, or until the pecans become fragrant and caramelised. Be careful not to overcook them, as they can quickly go from perfectly toasted to burnt.
  6. Cool and Enjoy: Once the pecans are done, remove them from the oven and let them cool on the baking sheet. As they cool, the caramelised coating will become slightly crispy. Once cooled, store the pecans in an airtight container at room temperature.
