Baked, seasoned carrot and parsnip with ajvar sauce

Takes ordinary veg to the next level by seasoning them with a blend of spices, roasting them to perfection, and serving them with a vibrant and tangy ajvar sauce

  • 500g carrots and parsnips, peeled and cut lengthways
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 4 tablespoons ajvar sauce (store-bought or homemade)
  • 2 tablespoons white sesame seeds
  1. Preheat your oven to 200ยฐC (180ยฐC fan)/400ยฐF/gas mark 6.
  2. In a large mixing bowl, combine the peeled and trimmed carrots with the olive oil, ground cumin, smoked paprika, ground coriander, salt, and black pepper. Toss everything together to ensure the carrots are well coated with the seasoning.
  3. Transfer the seasoned carrots to a baking sheet lined with parchment paper, spreading them out in a single layer to ensure even roasting.
  4. Roast the carrots in the preheated oven for approximately 25-30 minutes or until they are tender and have developed a slight caramelisation, stirring them halfway through the cooking time for even browning.
  5. While the carrots are roasting, chop the fresh parsley finely.
  6. Once the carrots are done roasting, remove them from the oven and transfer them to a serving platter.
  7. Drizzle the ajvar sauce over the roasted carrots and sprinkle the chopped parsley on top for a pop of colour and freshness.
  8. Serve the seasoned roasted carrots with ajvar, sesame seeds and parsley as a delightful side dish that pairs well with a variety of main courses.
