Simple veggie slaw

  • 1/4 small red cabbage (about 200g), finely shredded
  • 1 large carrot (about 100g), grated
  • 1 red bell pepper (about 120g), thinly sliced
  • 1 small red onion (about 70g), thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon lemon pepper (optional, try something new, adds a lemony, peppery taste)
  1. Shred the cabbage: Use a sharp knife or a mandoline (with adult supervision)  to finely shred the red cabbage. Place it in a large mixing bowl.
  2. Grate the carrot: Peel and grate the carrot. Add it to the bowl with the cabbage.
  3. Slice the pepper and onion: Thinly slice the red bell pepper and red onion. Add them to the bowl as well.
  4. Make the dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and black pepper until well combined.
  5. Combine: Pour the dressing over the vegetables and toss everything together until the veggies are well coated.
  6. Serve: Let the slaw sit for about 10 minutes to allow the flavours to meld, then serve.
