Muffin pan frittatas

Encourage your little chefs to get creative with the ingredients, perhaps by adding their favourite vegetables or experimenting with different herbs. Happy cooking!

  • Cooking Time: 18-20 minutes
  • Total Time: Approximately 35 minutes
  • 6 large eggs
  • 120ml whole milk
  • 1 small red bell pepper, finely diced
  • 1 small courgette, finely diced
  • 50g grated cheddar cheese
  • 50g diced ham or cooked bacon bits (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • Cooking spray or a little oil for greasing the muffin pan
  1. Preheat the Oven: Preheat your oven to 180°C (350°F). Lightly grease a 12-cup muffin pan with cooking spray or a little oil.
  2. Prepare the Veggies: Dice the red bell pepper and courgette into small, even pieces. This is a great opportunity for children to practice their knife skills with supervision.
  3. Mix the Eggs and Milk: In a large bowl, whisk together the eggs and milk until well combined. Add a pinch of salt and pepper.
  4. Add Ingredients: Stir in the diced vegetables, grated cheddar cheese, ham or bacon (if using), and all the dried herbs and spices.
  5. Fill the Muffin Pan: Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  6. Bake: Place the muffin pan in the preheated oven and bake for 18-20 minutes, or until the frittatas are set and slightly golden on top.
  7. Cool and Serve: Allow the frittatas to cool in the pan for a few minutes before removing them. Serve warm or at room temperature.
