Delicious and easy-to-make dish perfect for summer barbecues, family gatherings, or a weeknight dinner. These skewers are marinated in a blend of aromatic spices and yogurt, then grilled to perfection, resulting in juicy, flavourful bites with a slight char. Serve them with a side of fresh salad, naan bread, or rice for a complete meal.
Prepare the Marinade:
In a large bowl, combine the yogurt, vegetable oil, garam masala, ground cumin, ground coriander, turmeric powder, paprika, black pepper, cayenne pepper (if using), minced ginger, minced garlic, lemon juice, and salt. Mix well to create a smooth marinade.
Marinate the Chicken:
Add the chicken pieces to the bowl and coat them thoroughly with the marinade. Cover the bowl with cling film and refrigerate for at least 2 hours, preferably overnight for the best flavour.
Preheat the Grill:
Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
Assemble the Skewers:
Thread the marinated chicken pieces onto the skewers, leaving a small gap between each piece to ensure even cooking.
Grill the Skewers:
Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.
Serve:
Transfer the skewers to a serving platter. Garnish with fresh coriander and serve with lemon wedges on the side.
