  • Total Time: 35 minutes
  • 4 Cod fillets(about 150g each)
  • Olive oil 2 tablespoons
  • 1 lemon, juiced and zested
  • ½ teaspoon cayenne pepper
  • New potatoes 500g, halved if large
  • Salt and pepper: to taste
  • Fresh parsley: for garnish (optional)
  1. Preheat the oven to 200°C (400°F, gas mark 6).
  2. Prepare the potatoes: Place the new potatoes in a pot of salted water. Bring to a boil and simmer for about 10 minutes until just tender. Drain and set aside.
  3. Season the cod: In a small bowl, mix the olive oil, lemon juice, lemon zest, and cayenne pepper. Lay the cod fillets in a baking dish. Season them with salt and pepper, then drizzle the lemon and olive oil mixture over the top.
  4. Bake the cod and potatoes: Add the parboiled potatoes around the cod in the baking dish. Bake in the preheated oven for about 12-15 minutes, or until the cod flakes easily with a fork.
  5. Serve: Garnish with fresh parsley if desired and serve immediately.
