Easy garam masala vegetable fritters

Versatile, tasty and healthy fritters, so easy to make for a quick lunch.

Ingredients

  • I small cooking onion + 1 sweet
  • 1 carrot
  • 1 courgette
  • 1 red pepper
  • 1 aubergine
  • 1 tbsp of Garam Masala
  • 1/2 tsp ground coriander
  • 1 tbsp of natural tomato sauce
  • 150g of chickpea flour
  • 100g of whole grain com flour
  • salt + black pepper
  • Oil for frying

Method

  1. Wash & finely chop and the vegetables, put them in a bowl & add the tomato sauce, spices and salt + pepper & mix well. A
  2. Add the flours & leave for an hour or two in the fridge.
  3. Roll into balls, flatten & fry in hot oil.
