Spiced chickpeas (chole)

  • 400g can of chickpeas, drained and rinsed
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, minced
  • 400g can of chopped tomatoes
  • 1 green chilli, finely chopped (optional for heat)
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp coriander seeds (or coriander powder)
  • 1/2 tsp chilli powder (adjust to taste)
  • 1 tsp garam masala
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh coriander leaves, for garnish
  • Water as needed
  1. Prep the Base: In a large pan, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, sautéing until the onions are golden brown and soft, about 5-7 minutes.
  2. Add Spices: Toast the coriander seeds in a dry frying pan until fragrant then use a pestle and mortar to grind to a powder. Add the ground coriander seeds, turmeric, cumin, coriander, chilli powder, and salt to the onion mixture. Cook for another 2 minutes until the spices are fragrant.
  3. Simmer the Chickpeas: Add the drained chickpeas, chopped tomatoes, and green chilli (if using) to the pan. Pour in enough water to just cover the chickpeas, and bring to a simmer. Cook uncovered for 15-20 minutes, or until the sauce thickens.
  4. Finish with Garam Masala: Stir in the garam masala and cook for an additional 2-3 minutes. Adjust seasoning to taste.
  5. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with rice, naan, or your choice of bread.
