Moroccan Goat Cheese and Vegetable Skewers

  • 8 wooden skewers, soaked in water for 30 minutes
  • 200g goat cheese, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 courgette, sliced into rounds
  • 1 red onion, cut into wedges
  • 10 cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • Freshly ground black pepper, to taste
  • Fresh coriander leaves, for garnish
  • Black nigella seeds for garnish
  1. In a bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to create the marinade.
  2. Place the goat cheese cubes in a separate bowl and pour half of the marinade over them. Toss gently to coat the cheese evenly. Allow the cheese to marinate for at least 30 minutes to develop the flavours.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated goat cheese cubes, bell peppers, zucchini slices, red onion wedges, and cherry tomatoes onto the soaked wooden skewers in any order you prefer.
  5. Brush the vegetable skewers with the remaining marinade, ensuring all sides are coated.
  6. Place the skewers on the preheated grill and cook for 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Once cooked, remove the skewers from the grill and garnish with fresh cilantro leaves.
  8. Serve the Moroccan Goat Cheese and Vegetable Skewers hot as an appetiser or as a main dish with couscous, salad, or warm pita bread.
