Smoky, spiced, crispy new potatoes

These potatoes make for a perfect side dish or even a delicious snack.

  • 500g new potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon sea salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed chilli flakes
  • Chopped fresh parsley for garnish (optional)

Preheat Your Oven: Preheat your oven to 200°C (180°C fan-assisted) or 400°F.

Clean and Slice Potatoes: Wash the new potatoes thoroughly and then slice them into bite-sized pieces. Leave the skin on for extra texture and flavor.

Create Spice Mixture: In a mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, dried thyme, chilli flakes, salt, and black pepper. Mix well to create a flavorful spice mixture.

Coat the Potatoes: Add the sliced potatoes to the spice mixture and toss them until they are evenly coated with the seasoned oil.

Bake in the Oven: Place the coated potatoes on a baking tray lined with parchment paper, ensuring they are spread out in a single layer for even cooking. Put the tray in the preheated oven.

Roast the Potatoes: Roast the potatoes in the oven for 30-35 minutes, or until they are golden brown and crispy on the outside, and tender on the inside. You can toss them once or twice during the cooking process to ensure even browning.

Serve: Remove the potatoes from the oven and let them cool for a minute. Optionally, garnish with chopped fresh parsley for a burst of color and freshness. Serve hot as a delightful side dish or enjoy them as a tasty snack. Perfect with a garlic mayonnaise dip.
