Inspired by Turkish cuisine combining the rich flavours of spiced seasoned lamb with a tomato sauce, melted mozzarella cheese, onions, and red peppers, atop a delicious flatbread.

Spiced lamb flatbread

This recipe is bursting with Mediterranean flavours and makes for a satisfying and comforting meal and perfect for a cozy dinner or a special occasion.

For the Spiced Lamb:

  • 350g (12 oz) ground lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chilli powder (adjust to taste)
  • Salt and black pepper to taste

For the Tomato Sauce:

  • 200g (7 oz) canned crushed tomatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

For Assembling:

  • 2 large flatbreads (pide or naan)
  • 150g (5 oz) mozzarella cheese, shredded
  • 1 small red onion, thinly sliced
  • 1 red pepper, thinly sliced

Prepare the Spiced Lamb:

  • In a large frying pan, heat some olive oil over medium-high heat.
  • Add the finely chopped onion and minced garlic, sauté until they become translucent.
  • Add the ground lamb and cook, breaking it apart with a spoon, until it’s browned and cooked through.
  • Stir in the ground cumin, ground coriander, paprika, chili powder, salt, and black pepper. Cook for another 2-3 minutes until the spices are fragrant. Remove from heat and set aside.

Make the Tomato Sauce:

  • In a small saucepan, heat olive oil over medium heat.
  • Add the canned crushed tomatoes, dried oregano, salt, and pepper. Simmer for about 10 minutes until the sauce thickens. Set aside.

Assemble and Bake:

  • Preheat your oven to 200°C (180°C fan/ Gas Mark 6).
  • Place the flatbreads on a baking sheet.
  • Spread a generous amount of the tomato sauce over each flatbread.
  • Sprinkle half of the shredded mozzarella cheese over the tomato sauce.
  • Divide the spiced lamb mixture evenly between the two flatbreads, spreading it out.
  • Top with the remaining mozzarella cheese, sliced red onion, and red bell pepper.

Bake:

  • Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the flatbreads are crispy, and the cheese is melted and bubbly.

Serve:

  • Remove from the oven, slice, and serve hot. Garnish with fresh herbs like parsley or coriander if desired.
