Berbere spiced chicken

Bring a touch of Ethiopian cuisine into your kitchen with the use of Berbere, a traditional spice mix known for its heat and depth of flavour. Serve with berbere spiced rice

Total time: 20 minutes

  • 500g chicken breasts boneless skinless, use a rolling pin and pound to make 25mm thick
  • 4 tablespoons mayonnaise
  • 1 teaspoon berbere spice blend
  • salt and pepper to taste
  • Preheat oven to 450ºF and line a rimmed baking sheet pan with foil and spread a little oil on it.
  • Mix the mayonnaise with the berbere spice blend. Season the chicken with salt and pepper and then coat the top with mayo spice mixture then place the coated chicken onto the prepared pan.
  • Roast at 450ºF for 8-10 minutes, or until cooked through.
