Berbere spiced chicken

An easy chicken dinner using berbere – a warming Ethiopian spice blend – for a meat with tender and juicy results.

  • 500g chicken breastsย boneless skinless, use a rolling pin and pound to make 25mm thick
  • 4ย tablespoonsย mayonnaise
  • 1ย teaspoonย berbere spice blend
  • salt and pepperย to taste
  • Preheat oven to 450ยบF and line a rimmed baking sheet pan with foil and spread a little oil on it.
  • Mix the mayonnaise with the berbere spice blend. Season the chicken with salt and pepper and then coat the top with mayo spice mixture then place the coated chicken onto the prepared pan.
  • Roast at 450ยบF for 8-10 minutes, or until cooked through.
