Greenfields Blend Chicken Madras

Our perfect blend of madras spices create this popular Indian curry, renowned for its aromatic spices and rich tomato-based sauce.
  • Preparation Time: 15 minutes
  • Cooking Time: 30 minutes
  • Total Time: 45 minutes
  • 500g boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tablespoons vegetable oil
  • 1 large onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 2 tbsp Greenfields Madras curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/4 tsp chilli powder (adjust to your spice preference)
  • 400g canned chopped tomatoes
  • 200ml coconut milk
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • Salt to taste
  • Coriander leaves (for garnish)
  1. Heat the vegetable oil in a large pan or pot over medium heat.
  2. Add the finely chopped onions and sautรฉ until they become soft and translucent.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the Madras curry powder, ground cumin, ground coriander, turmeric powder, and chilli powder. Stir well to coat the onions and spices with the oil and cook for about 1 minute to release the flavours.
  5. Now, add the bite-sized chicken pieces to the pan. Cook the chicken until it turns white on all sides, ensuring it’s seared and sealed to retain its juices.
  6. Pour in the canned chopped tomatoes, coconut milk, and tomato paste. Mix everything together, and then add the sugar and a pinch of salt. Stir to combine all the ingredients.
  7. Reduce the heat to low, cover the pan with a lid, and let the curry simmer for about 20-25 minutes. This will allow the chicken to cook thoroughly and absorb all the delicious flavours of the sauce.
  8. After the cooking time is complete, taste the curry and adjust the seasoning according to your preference. You can add more salt, madras powder or or chilli powder if desired.
  9. Once the chicken is tender and the flavours have melded beautifully, your Chicken Madras is ready. Serve it hot over steamed basmati rice or with naan bread. Garnish with coriander leaves for colour
