Traditional Turkish pide

Pide, often referred to as Turkish pizza, is a beloved traditional dish in Turkey known for its delicious fillings and unique boat shape. This savoury flatbread can be topped with a variety of ingredients, but the most common include minced meat, vegetables, and cheese.

Total Time: Approximately 1 hour 50 minutes

For the dough:

  • 500g strong white bread flour
  • 7g fast-action yeast
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 300ml warm water

For the topping (Minced Meat Filling):

  • 250g minced beef or lamb
  • 1 medium onion, finely chopped
  • 1 green pepper, finely diced
  • 2 tomatoes, finely diced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 100g feta cheese, crumbled (optional)
  • 1 egg (for egg wash)
  • Parsley, chopped (for garnish)

Prepare the Dough: In a large mixing bowl, combine the flour, yeast, and salt. Make a well in the center and add the olive oil and warm water. Mix to form a soft dough. Knead on a floured surface for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

Prepare the Topping: While the dough is rising, prepare the topping. In a frying pan, cook the minced meat over medium heat until browned. Add the onion, bell pepper, tomatoes, paprika, cumin, salt, and pepper. Cook for another 5-7 minutes until the vegetables are soft. Set aside to cool slightly.

Preheat the Oven: Preheat your oven to 220°C (428°F). If you have a pizza stone, place it in the oven to preheat as well.

Shape the Pide: Once the dough has risen, punch it down and divide it into 4 equal parts. On a floured surface, roll each part into an oval shape about 5mm thick. Transfer to baking sheets.

Add Toppings: Spoon the meat mixture onto each piece of dough, leaving a small border around the edges. Fold the edges over the filling and pinch the ends to create the traditional boat shape. If using, sprinkle crumbled feta cheese over the top. Brush the edges of the dough with beaten egg.

Bake: Bake in the preheated oven for 15-20 minutes or until the pide is golden brown and the filling is hot.

Garnish and Serve: Garnish with chopped parsley before serving. Enjoy your homemade Turkish pide hot!
