A delicious macro bowl with roasted squash, chickpeas & sweet potato previously marinated with Za’atar, a classic Middle Eastern seasoning & a unique blend of herbal, earthy, savoury, tangy and salty flavours which is also known to have medicinal properties. The blend contains: sesame, sumac, turmeric, thyme, wheat, sunflower oil, salt and citric acid.
Crispy kale, avocado & walnuts are added to round up a balanced meal.

Ingredients

  • 1 large sweet potato
  • 1/2 of butternut squash
  • 200 g of cooked chickpeas 
  • 3 garlic cloves
  • Oil for roasting
  • 1tbsp of Greenfields Za’atar spice blend 
  • salt + cracked black pepper

METHOD

  1. Peel the sweet potato (but not the squash – leave skin on)
  2. Chop them both finely and sprinkle them with the salt, pepper and Za’atar spice.
  3. Place them in a baking tin with the peeled garlic and drained chickpeas.
  4. Pour of a little oil and roast for approximately 40 minutes at 180°C
