Za’atar and harissa roasted carrots

A vibrant side dish that combines the heat of harissa with the earthy, herbal notes of za’atar. The maple syrup brings a subtle sweetness that balances the spice and enhances the natural flavors of the carrots. Adds a burst of colour and flavour to your dinner table, and is a healthy and delicious side dish, these roasted carrots are sure to impress. With simple ingredients and easy preparation, this dish highlights the beauty of combining traditional Middle Eastern spices with the natural sweetness of vegetables.

  • 600g carrots, peeled and sliced lengthwise
  • 2 tablespoons olive oil
  • 1 tablespoon Greenfields harissa seasoning
  • 1 tablespoon Greenfields za’atar
  • 2 tablespoons maple syrup
  • 2 teaspoons Greenfields garlic powder
  • Greenfields sea salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)
  1. Preheat your oven to 200°C (fan 180°C, gas mark 6).
  2. Prepare the carrots: In a large bowl, toss the sliced carrots with olive oil, harissa seasoning, garlic powder, za’atar, and a generous pinch of salt and pepper until well coated.
  3. Roast the carrots: Spread the carrots in a single layer on a baking tray lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through the cooking time.
  4. Finish with maple syrup: Once the carrots are roasted and can easily be pierced with a knife, drizzle maple syrup over the top and toss to coat evenly. Return to the oven for an additional 5 minutes to glaze.
  5. Serve: Transfer the carrots to a serving dish, sprinkle with chopped fresh parsley, and serve immediately.
