Roasted, spicy chicken legs

Roasted spicy chicken legs give you a perfectly spiced dish that’s perfect for spice lovers and chicken enthusiasts alike, a dish that’s both satisfying and easy to prepare.

Cooking times: 40 minutes

  • 6 chicken legs
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper (adjust to your preferred spice level)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 tbsp grind of five mix peppercorns (optional)
  1. Preheat your oven to 200°C (180°C for fan ovens) or 392°F (356°F for fan ovens).
  2. In a small bowl, combine the paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, black pepper, dried oregano, and dried basil to create the spice rub. (Also add a couple of grinds of the five mix peppercorns if desired).
  3. Pat the chicken legs dry with paper towels to help the spice rub adhere better to the chicken.
  4. Drizzle the olive oil over the chicken legs and rub them to coat evenly.
  5. Sprinkle the spice rub generously over the chicken legs, making sure to coat them thoroughly.
  6. Place the seasoned chicken legs on a baking tray lined with parchment paper or a greased ovenproof dish.
  7. Roast the chicken legs in the preheated oven for approximately 35-40 minutes or until they reach an internal temperature of 75°C (165°F) and the skin is crispy and golden brown.
  8. Once done, remove the chicken legs from the oven and let them rest for a few minutes before serving.
  9. Serve your roasted spicy chicken legs with your choice of side dishes, such as mashed potatoes, roasted vegetables, or a fresh salad.
