Creamy lemon and pineapple & chia smoothie

The pineapple brings in a dose of vitamin C, which is great for the immune system, while the lemon juice adds a refreshing zing and helps with vitamin absorption. Coconut milk gives this smoothie a creamy texture and adds healthy fats that are good for brain health.

  • 1 large lemon, juiced (about 30 ml of lemon juice)
  • 250g of fresh pineapple chunks
  • 2 tablespoons of chia seeds
  • 200 ml of coconut milk (or almond milk for a lighter option)
  • 1 tablespoon of honey or to taste (optional, for added sweetness)
  • A handful of ice cubes (optional, for a colder smoothie)
  1. Prepare your ingredients: juice the lemon, chop the pineapple into chunks, and measure out your chia seeds and coconut milk.
  2. In a blender, combine the lemon juice, pineapple chunks, chia seeds, and coconut milk. Add honey if you prefer a sweeter taste.
  3. Blend on high speed until the mixture is smooth and creamy. If the smoothie is too thick, you can add a little more coconut milk to achieve your desired consistency.
  4. Taste and adjust the sweetness by adding more honey if needed.
  5. For a cold smoothie, add a handful of ice cubes to the blender and blend until smooth.
  6. Serve immediately in a tall glass and enjoy!
