Hearty beef and vegetable soup

Warm up your soul with a comforting bowl of hearty beef and vegetable soup

Approximately 1 hour and 30 minutes

  • 450g lean stewing beef, cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 2 potatoes, peeled and diced
  • 1 leek, sliced (white and light green parts)
  • 400g canned diced tomatoes
  • 1.2 ltr beef stock (beef and red wine stock works well)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 200g green beans, trimmed and cut into bite-sized pieces
  • 100g peas (fresh or frozen)
  • 100g sweetcorn (fresh, frozen, or canned)
  1. Heat the vegetable oil in a large soup pot over medium-high heat.
  2. Add the cubed beef and sear until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set it aside.
  3. In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onions become translucent.
  4. Add the carrots, celery, potatoes, and leek to the pot. Cook for another 5 minutes, stirring occasionally.
  5. Return the seared beef to the pot and add the diced tomatoes, beef stock, dried thyme, dried rosemary, salt, soy sauce, and black pepper. Stir well to combine.
  6. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes to 1 hour, or until the beef is tender and the vegetables are cooked through.
  7. About 15 minutes before serving, add the green beans, peas, and sweetcorn. Continue to simmer until the vegetables are tender.
  8. Taste and adjust the seasoning, adding more salt and pepper if needed.
  9. Serve the hearty beef and vegetable soup hot, garnished with fresh herbs if desired. Enjoy!
