An exotic and spicy twist to the original Spanish dish Gazpacho. Ingredients

  • 3 mangoes
  • 1 tomato
  • ½ cucumber
  • ½ green bell pepper
  • 1 garlic clove
  • 4 tbsp olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp toasted sesame seeds
  • ½ tsp Greenfields ground cardamon
  • A pinch of Greenfields sumac

METHOD

  1. Peel and chop mango and cucumber, blend together with remaining ingredients – except for the sumac and sesame seeds.
  2. Refrigerate for 2 hours, sprinkle each dish with the sesame and sumac then serve
