Ingredients
300g minced beef
1 tablespoon vegetable oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon Greenfields ground cumin
1 teaspoon Greenfields paprika
1/2 teaspoon Greenfields chilli powder (adjust to taste)
Salt and black pepper to taste
8 small flour tortillas
100g grated Cheddar cheese
Vegetable oil for frying
Sour cream, salsa, and guacamole for serving
Method
Heat the vegetable oil in a large frying pan over medium heat. Add the chopped onion and minced garlic and sauté
Add the beef to the pan and cook, stirring occasionally, until it is browned and cooked through.
Add the ground cumin, paprika, chilli powder, salt, and black pepper to the pan. Stir well to coat the meat evenly with the spices. Cook for an additional 2-3 minutes. Taste and adjust the seasoning if needed.
Preheat your oven to 200°C (180°C for fan ovens). Place a wire rack on a baking sheet and set it aside.
Warm the flour tortillas in the microwave for a few seconds to make them pliable. Spoon a portion of the beef mixture onto the centre of each tortilla, spreading it in a line from end to end. Sprinkle some grated Cheddar cheese over the beef.
Roll up each tortilla tightly, starting from one end, to form taquitos. Secure the end with a toothpick to keep it closed.
Heat enough vegetable oil in a large frying pan to cover the taquitos. Fry them in batches until they turn golden brown and crispy on all sides. Use tongs to turn them carefully, so they cook evenly.
Once fried, transfer the taquitos to the wire rack on the baking sheet to drain any excess oil. Remove the toothpicks.
Place the baking sheet with the taquitos in the preheated oven and bake for 10-15 minutes, or until the tortillas are crisp and the cheese is melted.
Serve the spicy beef taquitos hot with sour cream, salsa, and guacamole for dipping. Enjoy!
