Cucumber & potato salad rolls

These delicious easy refreshing and satisfying potato salad cucumber rolls are perfect for a light summers lunch. Each cucumber contains around 95% water which is what your cells need to keep you hydrated in the hot weather.

Ingredients

1 cucumber
2 potatoes
medium sized
1 garlic
clove
½ red onion
walnuts
handful
3 tbsp vegetable milk
Greenfields himalayan salt
¼ tsp Greenfields black pepper
1 radish
grated
Servings

Instructions

Peel, chop and boil potatoes, drain and mash.
Chop onion finely, press garlic and chop up walnuts, add all to the mashed potatoes. Add salt and pepper and mix well.
Thinly slice the cucumber from tip to bottom. Spoon out a lump of mixture and roll it in the cucumber.
Place the grated radish on top of the rolled cucumber, enjoy!
