Buffalo Chicken Stuffed Sweet Potatoes

If you’re a fan of spicy, tangy, and oh-so-satisfying dishes, this recipe for Buffalo Chicken Stuffed Sweet Potatoes is perfect for you!

  • 4 medium-sized sweet potatoes
  • 2 chicken breasts, cooked and shredded
  • 4 tablespoons sriracha hot sauce
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup blue cheese dressing
  • 2 green onions, thinly sliced (optional, for garnish)
  1. Preheat your oven to 200°C (180°C fan-assisted or Gas Mark 6).
  2. Wash the sweet potatoes and pat them dry. Using a fork, poke a few holes in each potato to allow steam to escape during baking.
  3. Place the sweet potatoes directly on the oven rack or on a baking sheet lined with foil. Bake for approximately 45-60 minutes, or until the potatoes are tender and easily pierced with a fork.
  4. While the sweet potatoes are baking, prepare the buffalo chicken filling. In a bowl, combine the shredded chicken, hot sauce, melted butter, garlic powder, paprika, salt, and black pepper. Mix well until the chicken is evenly coated with the buffalo sauce mixture.
  5. Once the sweet potatoes are cooked, remove them from the oven and allow them to cool slightly. Carefully slice each potato lengthwise, creating a slit in the centre to create a pocket for the filling.
  6. Stuff each sweet potato with a generous amount of the buffalo chicken mixture, using a spoon to evenly distribute it.
  7. Return the stuffed sweet potatoes to the oven and bake for an additional 10 minutes, or until the chicken filling is heated through.
  8. Remove the sweet potatoes from the oven and let them cool for a few minutes. Drizzle the tops with blue cheese dressing and sprinkle with sliced green onions for garnish.
  9. Serve the Buffalo Chicken Stuffed Sweet Potatoes while they’re still warm and enjoy the delicious blend of flavours!
