This delightful herby chicken roll recipe combines the succulent flavours of tender chicken breast with a fragrant blend of dried herbs.

Herby Chicken Roll

These rolls are perfect for a quick weeknight dinner. The combination of aromatic herbs and succulent chicken creates a mouthwatering flavour, serve with a side of roasted vegetables or a fresh salad for a complete and satisfying meal.

  • Preparation time: 15 minutes
  • Cooking time: 30 minutes
  • Total time: 45 minutes
  • 4 chicken breasts, boneless and skinless
  • 2 tablespoons dried mixed herbs (such as thyme, rosemary, oregano, and basil)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  1. Preheat the oven to 200°C (400°F) and line a baking dish with parchment paper.
  2. In a small bowl, combine the dried herbs, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to create a flavourful herb blend.
  3. Lay the chicken breasts flat on a cutting board and sprinkle the herb blend evenly over both sides of each chicken breast. Press gently to ensure the herbs adhere to the chicken.
  4. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear them for about 2-3 minutes on each side until they develop a golden-brown crust.
  5. Transfer the seared chicken breasts to the prepared baking dish and place them in the preheated oven. Bake for approximately 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  6. Once cooked, remove the chicken from the oven and let it rest for a few minutes before slicing. This will help the juices redistribute, ensuring moist and tender chicken.
  7. Slice the herby chicken rolls into thick, juicy pieces and serve alongside your favourite side dishes or a fresh salad. Enjoy!
