Berbere spiced chicken and figs

Delicious warm, aromatic spices of Ethiopian cuisine and the natural sweetness of figs.
  • Prep Time: 15 minutes
  • Cook Time: 30-35 minutes
  • Total Time: 45-50 minutes
  • 4 chicken breasts or 6 chicken drumsticks (about 600g total)
  • 2 tbsp berbere spice mix
  • 2 tbsp olive oil
  • 1 red onion, finely sliced
  • 3 garlic cloves, minced
  • 200g dried figs, halved
  • 400ml chicken stock
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • Salt and pepper, to taste
  • Fresh coriander, chopped (for garnish)
  1. Preparation: Preheat your oven to 200°C (392°F). Season the chicken breasts with salt, pepper, and the berbere spice mix, ensuring they are well-coated.
  2. Browning the Chicken: In a large, oven-proof skillet or frying pan, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 2-3 minutes on each side, or until they are golden brown. Remove the chicken from the pan and set aside.
  3. Sautéing the Aromatics: In the same pan, reduce the heat to medium. Add the sliced red onion and minced garlic, sautéing until the onion is soft and translucent, about 5 minutes.
  4. Adding Figs and Liquids: To the pan, add the halved figs, chicken stock, honey, and apple cider vinegar. Stir well to combine, scraping any browned bits off the bottom of the pan.
  5. Baking: Return the chicken to the pan, nestling it among the figs and liquid. Place the skillet in the preheated oven and bake uncovered for 20-25 minutes, or until the chicken is thoroughly cooked and the sauce has slightly thickened.
  6. Garnish and Serve: Once cooked, remove from the oven and let it rest for a few minutes. Garnish with chopped fresh coriander before serving.
